Grain-free granola recipe!

On Thursday, I found a recipe for Granola that looked pretty quick and easy.. but then I realised it was nut free. Now I don't know about you, but I love me some whole almonds in my granola! I decided to sneak in some nuts and adapt the recipe a bit to suit my tastes and it turned out amazing! I have been enjoying it with milk or yogurt and fruit as a quick, easy, delicious grain free breakfast.


It's sweet, crumbly, chewy and crunchy.. exactly how granola should be but of course this is grain free. The only sugars come from the honey and raisins, the rest is nuts, seeds and coconut oil. Here is the recipe, let me know if you give it a go! 


Grain free Granola!

2 tablespoons warm water,
1 tablespoon chia seeds,
1/2 cup honey,
2 tablespoons coconut oil,
1 tablespoon Primrose's Kitchen organic raw 5 seed butter
1 tablespoon almond butter,
3/4 cup raw almonds.. (take one small handful and put to the side)
3/4 cup sunflower seeds,
2 tablespoons sesame seeds,
1/2 teaspoon salt,
2 teaspoons vanilla extract,
2 teaspoons ground cinnamon,
1/2 cup raisins,


Method
1. Preheat oven to 175 degrees C. Line a baking sheet with baking paper.
2. Mix the warm water & chia seeds together and put in the fridge,
3. Melt the honey in a saucepan until liquid, take off the heat and stir in coconut oil, seed butter and almond butter until all melted.
4. Meanwhile, combine the rest of the ingredients (except raisins and the handful of almonds) in a food processor until it resembles a course sand texture.
5. Stir the melted honey mixture and processed mixture together then add in the handful of whole almonds and stir through.
6. Spread everything onto the baking tray and bake for 20-24 minutes, stirring every 8 minutes or so.
7. When the granola is done, let it cool and then stir through the raisins.
8. Stir in a air tight container and enjoy with yogurt or milk & fruit.
